Dessert for Our lady of Fatima Feast day!

Quindão Recipe

- 3 eggs
- 10 yolks;
- 2 cups of sugar;
- 1 1/2 cup of grated coconut;
- 1 Tbsp of unsalted butter;
- 1 Tsp vanilla extract; 
- sugar and butter for greasing and sprinkling the pan. 

After you grease the pan, sprinkle sugar in it and shake it around the pan a little bit so that all sides and the bottom are evenly coated;
In a blender, beat the eggs, egg yolks, sugar, butter and vanilla until smooth. Gently mix the coconut into the mixture. Then  pour it into a greased and sugared pan, cover it with foil and bring to bake in water bath in a preheated oven (400 º F) for about 50 minutes, remove the foil and bake for 10 more minutes or until a golden-colored crust forms on the top.
After cooling, carefully remove from pan. It is served cold.

If you prefer, you can make many mini-sized portions by using a cupcake pan.
